Interesting facts about Assam pepper

In the hills of Kamrup in northern India, around 400 households live from the Assam pepper harvest. Kerala and Karnataka make up much of India's peppered duck. Botanically, it belongs to the real pepper genus. It is related to the long pepper.

Use of Assam Pepper

It has a slightly smoky taste. This type of pepper has a unique shape reminiscent of blackberries. The sharpness is very subtle, it takes some time to develop. It goes fabulously with duck and with game, root vegetables, parsnips, carrots or roast ham. It is a delicious change to mango and pineapple and similar tropical fruits.

Pepper Lamb

Ingredients:
1 kg boneless lamb cut into pieces
1/2 cup plain yogurt
2 tablespoons olive oil
1 teaspoon of Eder Gewürze cumin
1 teaspoon Eder Gewürze fennel
5 - 6 teaspoons Eder Spices coriander leaves
1 large onion finely chopped
1 tablespoon Eder Gewürze chopped ginger
1 tablespoon Eder Spices chopped garlic
1 tablespoon Eder Spices Assam pepper
1 teaspoon Eder Spices ground coriander
some Eder Spices seasalt
Fresh coriander leaves and
lemon wedges for garnish
Marinate the lamb with yoghurt and let stand for 2 hours. Heat the oil in a pan, add the cumin, coriander and fennel to the pan and sauté a little. Add the onion, add the ginger and garlic, salt, add the marinated lamb to the pan, add the remaining marinade. Add a cup of water, close the lid and cook at 180 degrees.
