The wild pepper or Piper Borbonese is harvested in Madagascar. The wild pepper grows high up in the trees in aheight from 10 - 20m. The fruits are harvested by hand. The harvesting is very dangerous and takes place once a year. See the berriessimilar to cubeb piper, but they are somewhat smaller. The taste of these small pepper is earthy with somethingcitrus-like, floral aftertaste. The scarcely available peppercorns bring freshness to your food.
Use this rarity as black pepper, grind the grains directly to the finished food. Use them very sparingly.
