In the heart of the state of Minas Gerais, with its long mountain ranges, many small lakes and its mineral-rich soil,
is the well-known coffee growing region "Sul de Minas". Here, the first plantations were created more than one hundred years ago.
These includes the Fazenda Lagoa, which produces world-famous lagoon coffee at an altitude of 950 to 1,200 meters and
covers a total area of 400 hectares, taking into account the local ecosystem. The plantation is surrounded by 660 hectares
of protected rainforest, where wolves, big cats and hundreds of different species of birds live. The annual amount of this
plantation is about 8,000 - 12,000 sacks of 60 kg per year. Due to the geographic situation and the high quality standards,
all hands are harvested without exception. The cherries, which were picked in the morning, are transported to the
processing plant in the afternoon. There, the cherries are processed in five steps. First, any remaining branches and
leaves are removed, before ripe, overripe and still green cherries are separated from each other in a water tank. Later,
a portion of pulp is removed and the beans are dried with the existing glassine envelope in the sun.
During this time, the coffee bean pulls the sweetness from the remaining fruit. After two days, this first drying
process is completed and the beans are dried on wood-fired dryers to a residual moisture content of 11-12%.
